I admit that I have had a bit of an obsession with pistachios this summer. Raw and unsalted, salt and pepper, roasted and lightly salted — yes, please, all of the above.
I just love pistachios because they’re such a great snack — and by great I mean that they are not only delicious but also nutritious. They’re a perfect on-the-go snack that won’t melt, freeze or go bad if they’re left in the bottom of your backpack or locker for weeks on end. Bingo! We have a winner for a school snack.

This little nut, which often has been cast aside in favor of the more popular almonds and cashews, actually are packed with flavor and super good for you as a lacrosse player. Not only are pistachios heart-healthy, but they also work to stabilize blood sugar, manage weight and improve brain function. Of all the nuts, they boast one of the highest concentrations of potassium and also contain Vitamin A, Vitamin B6 and magnesium along with lutein and zeaxanthin, two antioxidants that help with vision.
